Parmesan Roast Chicken

Serves 6 to 8

 1.5 kilos whole chicken
 1 cup mayonnaise
 1/2 cup grated Parmesan cheese
 1 teaspoon ground oregano
 1 teaspoon salt.

Preheat oven to 375°F.

Wash chicken well and pat dry with paper towels.

In a mixing bowl, combine mayonnaise, Parmesan cheese, oregano and salt. Mix well.

Rub chicken with the mayonnaise and cheese mixture.

Bake chicken for about 1 hour, or until golden in color and juices run clear when the thigh is pricked with a fork. Brush occasionally with mayo-cheese mixture. Serve warm.
