Superfood Salad



Full of some of the healthiest foods around, and topped off with a light citrus dressing, this guilt free salad doesn’t cheap you out of taste.

3 oz walnuts
3 oz fresh beets
1 head chicory
1 head romaine lettuce
8 oz broccoli florets
Seeds from 1 pomegranate

For the dressing:
Juice and zest of 2 oranges
2 tbsp extra virgin olive oil
2 tbsp cider vinegar
2 tbsp honey
2 tbsp fresh mint

1. Preheat the oven to 375 F.

2. Spread the nuts out on a baking tray and roast for 10-15 minutes until golden.

3. Peel the beets and slice into matchsticks. Shred the chicory and romaine lettuce.

4. Toss the nuts, beets, leaves, broccoli and pomegranate seeds together in a
serving bowl.

5. Whisk together the ingredients for the dressing and serve with the salad.

Makes four servings.
