Marvellous mash!


With these three recipes, you'll change mashed potato from a side dish to the main attraction.


1. Hotchpotch
This traditional Dutch way of eating mash means it becomes a fun and filling meal.

Put a bowl of hot mash on the table with sides like crispy bacon bits, fried onion, a jar of applesauce and shredded spinach or lettuce. You need about 2 medium potatoes and 2 strips of bacon per person. Everyone creates their own combination by mixing different things. The sweetness of the applesauce complements the bacon. You can also add tinned butter beans, peas, corn on the cob or shredded cooked cabbage.

2. Easy cheesy soup
With a few pantry ingredients and leftover mash, you can make this thick soup in a jiffy.

   Melt a knob of butter in a pot and add 2 chopped onions, a clove of crushed garlic and black pepper to taste. Sweat the onions without browning until soft.Takeyourtime,thisisthe most important part of the recipe.
   Sprinkle 2 tablespoons of flour over the onion and stir with a wooden spoon fora minute or 2. Add 3 cups of mashed potato and a pinch of mustard powder and mix.
   Crumble a chicken stock cube into the pot and add 1 cup of foilk. Stir and bring to a simmer. Dilute with hot water until you reach the desired consistency.
Stir through 1/2 cup of mature cheddar and add 2 chopped Vienna or bratwurst sausages. Season to taste.

3. Smoked chicken mash
Once the mash has been flavoured, you can eat it warm or cold, or you can shape it into patties and fry them like fish cakes
 
Gently saute 1 cup of chopped onion or leeks in a big knob of butter until soft and translucent. Add 2 cups of mash and 2 cups of shredded smoked or cooked chicken breast. Stir to combine. Add 1 teaspoon garlic powder, 1 teaspoon dried thyme and a big handful of grated cheese.
  Thin the mash with cream or yoghurt until the consistency is like a thick porridge. Serve hot with a squeeze of lemon juice. Alternatively, leave out the cream arid shape into patties. Chill in the fridge and fry in shallow oil.
