Mediterranean potato salad


Serves4-6. Preparation time 10 minutes. Cooking time 10 minutes.

The flavours in this salad get better the longer it stands. Add slices of salami or smoked chicken breast cubes fora bit of protein.

1 onion, chopped
1 tablespoon olive oil
2 cloves of garlic, chopped
0.5 tin (410 g) cherry tomatoes
0.5 tin (410 g) red peppers
8-12 baby potatoes, halved
10 black olives, pitted
2 wheels feta (we used sundried tomato-flavoured feta)

• In a small pot, saute the onion in the olive oil until soft Add the garlic, tomatoes and red pepper.Simmer for 10 minutes. In another pot, bring the baby potatoes to a boil and cook until tender.

• Drain and put in a plastic container.

• Pour the tomato sauce over the potatoes. Only add the olives and feta once the potatoes have cooled.

• Refrigerate and eat within 4 days.
