Tzatziki coleslaw



Serves 8. Preparation time 20 minutes. Cooking time 1 hour.

What could be easier than using tzatziki - the readymade yoghurt and cucumber dip you will find in the supermarket with the hummus and other pdtés - as a salad dressing? Sprinkle some fried bits of salami over the coleslaw for a salty twist.

2 red onions
olive oil
2 cloves of garlic
1/2 cabbage
a large handful of coriander leaves
1 cucumber
1-2 cups tzatziki
juice and zest of 1 lemon


• Baste the unpeeled onions with olive oil and wrap them in 2 layers of foil with the garlic Braai the parcels over medium-hot coals for about an hour until the onions are soft.

• Shred the cabbage and coriander and cut the cucumber into cubes. Combine everything with the tzatziki and lemon juice and zest

• Remove the onions and garlic from the foil and peel. Chop them and mix with the rest of the salad ingredients.
