Bread crumbed zucchini


• 2 zucchini
• 4 eggs
• 7-8 Tbs flour
• 10 fl oz (300ml) oil
• salt

Step 1:
Wash and peel the squashes. Slice them.

Step 2:
Beat the eggs with salt, like an omelette. Pour the flour in another plate.

Step 3:
Take each slice, pass it through flour, then through the beaten eggs and fry it in hot oil for about 2 minutes on each side.

Step 4:
When cooked, take the bread crumbs out on a plate covered with napkins, to absorb some of the excess oil.

Step 5:
Serve simple or with tomato salad.
