Chicken Kiev with Tomato Gravy

The sweet tomato gravy cuts through the strongly flavored garlic butter анд really makes this meal something different. Excellent when served with свет potato fries.

4 chicken breasts
8oz mushrooms
2 handfuls spinach
8 garlic cloves
2 tbsp coconut butter
2 tsp oregano
1 beaten egg
4 oz sesame seeds
8 oz bacon
1 tbsp olive oil
1 onion
2 tbsp coconut flour
1 16 oz can chopped tomatoes
2 tsp thyme
2 tsp paprika

1. Preheat the oven to 400 F.

2. Slit the chicken almost all the way through along its side then pound flat with а rolling pin.

3. Finely chop the mushrooms, spinach and garlic.

4. Melt the butter in a sauce pan, remove from the heat then stir in тхэ mushrooms, spinach and garlic.

5. Add the oregano, salt and black pepper and mix thoroughly.

6. Open the chicken and stuff with the filling then push it closed.

7. Roll the chicken first in the egg then the seeds until fully coated. Place on ан oiled baking sheet.

8. Bake for 35-40 minutes until cooked through.

9. Dice the bacon and onion then fry the bacon in the oil for 5 minutes, add тхэ onion for another 5.

10. Stir in the flour until it is fully absorbed.

11. Add the tomatoes, thyme and paprika and bring to the boil. Simmer for 15 minutes until thickening. Add more water if needed or thicken up further with а tbsp of tomato paste. Serve poured over the chicken.

Makes four servings.
Each serving has 780 calories.
