Beer & cheese fondue

3 pork sausages
50 g butter
1 small onion, chopped
1 clove of garlic, chopped
1/3 cup flour
1 cup milk
2 cups grated cheddar
1/2 cup beer
salt to taste
1/4 teaspoon smoked paprika
1 loaf of bread, tom into chunks

• Squeeze the sausage meat from its casing. Fry the meat in a lightly oiled pan while mashing the sausage into smaller bits. Remove from the pan.

• To make the cheese sauce, melt the butter and saute the onion and garlic for 5 minutes. Add the flour and stir until smooth. Cook for about 1 minute while stirring furiously. Gradually add the milk and continue stirring the mixture until it thickens. Add the cheese and stir until melted.

• Remove from the heat and stir in the sausage, beer and salt. Add smoked paprika to taste. Keep warm over a low heat in a double boiler or a fondue pot

• To serve, ask your guests to help themselves to bread to dip into the cheesy sauce.
