Beef soup

Great recipe for a delicious beef soup. Ready in 2 hours , medium complexity.


• 500-600 gr of beef meat
• 2 carrots
• 1 parsley
• 1 small celery
• 1-2 onions
• 200-300 gr of cauliflower , small pieces ( or cabbage )
• 200-300 gr of green beans
• 1-2 capsicums ( cut into cubes )
• 2-3 small potatoes ( cut into cubes )
• 1-2 boiled tomatoes , peeled off and cut into cubes
• fresh lovage
• salt
• pepper
• Optional: lemon or vinegar

Step 1:
Boil the meat in cold water with salt. Meanwhile, prepare the vegetables. Peel, wash, finely chop the onions, the celery, the parsley and the carrots in cubes. I like herbs and vegetables cut symmetrically in soup, and everything in the plate I want to fit in the spoon i eat with.

Step 2:
When the pot starts to boil, carefully remove the foam, several times. When the foam is not so abundant , add carrots, onions and celery. Simmer over low heat.

Step 3:
Prepare the remaining vegetables. Here you can make combinations as you like, I used cauliflower, green beans, peppers ( capsicum ) and potatoes.

Step 4:
They match so well in taste the cabbage, peas , beans , kale and even the zucchini. When root vegetables are half cooked ( when they begin to soften ) add cauliflower , peppers and green beans.

Step 5:
Check the cooking stage of the meat and when the fork easily slides in the meat let it cool slightly. Cut the meat into cubes as symmetric as you can ( only to look good ) and add it to the boiling broth. Check how cooked the vegetables are and when the vegetables are almost done add the potatoes too.

Step 6:
After the potatoes are boiling add the peeled tomatoes, cut into cubes. Let it boil for 2-3 times.

Step 7:
Prepare the greens. Wash and finely chop the lovage and sprinkle on top.
