Eggplant stuffed with vegetables.

This appetizer can be used as it is or as main dish. Very tasty and healthy.


• 2 small eggplants
• 1 onion
• 1 carrot
• 1 capsicum
• 2-3 cloves of garlic
• 2-3 slices of tomatoes
• Parsley
• Dill
• Oil

Step 1:
Wash eggplants; remove stem and cut incomplete in cross. Boil in salted water and drain well. Place chopped vegetables and braised eggplant with clefts, then bake, covered with oil and peeled skin tomatoes.

Step 2:
Served cold as an appetizer or main dish.
