• 4.2 oz (120g) sugar for melting
• 2.1 oz (60g) sugar for the milk
• 33.8 fl oz (1 liter) milk
• 8 eggs
• 2 Tbs vanilla extract

Step 1:
Boil the milk and let it cool until it's lukewarm, not cold.

Step 2:
Melt the sugar stirring continuously in a pot without plastic handles, as you will also use it in the oven. When the sugar becomes gold to brown, turn the heat off and spin the pot in order to spread the caramel on its walls.

Step 3:
Mix the eggs with the sugar until they become fluffy, add vanilla extract and the warm milk. Pour the mixture into the pan, over the caramel walls, and put it in the oven at 392F (200C) degrees for 15 minutes. Then, lower the heat to 350F (180C) degrees and wait for about 1 more hour until the mixture is firm.

Step 4:
You can serve flan in cups, but if you want to cut it into slices, you must keep it in the fridge for 1 hour.
