Veal soup

Delicious veal soup , you can serve it with sour cream. Medium complexity , 60 minutes cooking time.


• beef bones with meat on them
• a little smoked meat or something similar
• 2-3 green onions
• 1 white onion
• 1 bell pepper
• 1 green pepper
• some tomatoes
• 1 carrot
• 1 little celery with leaves
• 1 zucchini
• 1 potato
• 1-2 fresh lovages
• 1 green parsley
• some sourness juice ( lemon , cabbage , plums , etc )
• tomato paste

Step 1:
Put the meat with water to boil, get rid of the foam as many times as needed , meanwhile start preparing the vegetables.

Step 2:
Tomatoes are cooked, peel and then cut into cubes or mixed, by preference. Use the little holes grate for the carrot and for the celery root use the big holes grate.

Step 3:
After another 5 minutes add the noodles in the soup. As the soup boils , wash the parsley , get a few leaves , finely chop them and 10 minutes after we added the noodles turn off the heat and sprinkle the parsley on top. The zucchini and potatoes are cut into smaller pieces and finely chop the other vegetables. Fry the onion in oil, add carrots and bell peppers at the end.

Step 4:
First add the root vegetables and the potato because they cook slowly and after a few minutes of boiling add the other vegetables.

Step 5:
Add the stems of green onions and some chopped greens and close to the end when they all boiled , add the tomato juice.

Step 6:
Use boiled sourness juice for tartness with a bit of onion and thyme.

Step 7:
Put some tablespoons of tomato paste in the soup broth and add it to the pot. Turn off the heat, put the remaining greens in the soup and cover it with the lid.

Step 8:
SERVING: Best served with sour cream.
