Vegan pancakes

Pancakes recipe without milk or eggs – suitable for vegans or during fasting.


• 4.2 fl oz (125ml) soy milk
• 3.4 fl oz (100ml) sparkling water
• 5 oz (140g) flour
• 1 tbs oil
• 1 tbs sugar
• salt

Step 1:
Put the flour in a bowl and gradually add the soy milk and the water, stirring continuously so lumps don't form. Add the oil, the sugar and a little bit of salt. Stir everything well.

Step 2:
Heat a skillet over medium fire, pour some oil and pour the batter with a ladle. Because the recipe doesn't contain eggs, the layers poured should be thicker than usually.

Step 3:
Serve with jam, marmalade, fresh fruit or whatever you like on top.
