Winter vegetable cream soup

This is a soup suitable for the cold season. It is easy to prepare and really healthy.


• 1 medium celery
• 1 big carrot
• 1 medium onion
• 1 parsnip
• 1 potato
• 250g peas (from a can)
• 4/5 spoons of olive oil
• basil
• thyme
• salt
• pepper
• dill

1. Wash and clean all the vegetables. Chop the onion in small pieces, and the rest of the vegetables in cubes.

2. In a saucepan, heat the olive oil and make a soffritto of onions (for 1 minute) and then, add the celery, the carrot and the parsnip; mix it well and pour water over it until all the vegetables are covered. Let it boil for 10 minutes, add the potatoes and the peas and about 2 more cups of water.

3. Season it with the condiments and let it boil until all vegetables are done (15-20 minutes). Mix it in a blender until it turns into a cream. If necessary, add more salt and pepper; cut the dill very small and sprinkle it on top of the soup. Serve warm, with croutons.
