Mujadara ~ Lentils and Bulghur Wheat

Mujadara is a wholesome and filling dish which is simple to prepare.


▶ 3/4 cup brown lentils
▶ 3/4 cup bulghur wheat
▶ 2,5 cups water
▶ 4 medium onions
▶ 4 tablespoons olive oil
▶ 1 teaspoon sugar
▶ 1 teaspoon salt


1. Slice the onions and fry them in the olive oil until they become transparent. Add the sugar and fry for a further 6-10 minutes, over a medium heat, until the onions are dark brown. Do not be tempted to speed the process up by raising the heat, as it will burn the onions and spoil the taste.

2. Remove 1/2 of the onions and reserve for garnishing

3. Pour the water on the remaining onions and add the lentils. Bring to the boil. Add the bulghur wheat and salt, stir, and reduce the heat to low. Cover the pan.

4. Cook for a further 35-40 minutes, until the lentils are soft and the liquid has all been absorbed.

5. Turn out onto a serving dish and garnish with the onions you set aside.

6. Some recipes call for the optional addition of 1/2 teaspoon of cumin to the water, before adding the bulghur wheat.
